Sheet Pan Pork and Peppers
When it comes to dinner, I love easy dinner recipes like my chicken cheesy rice, or old-fashioned sloppy joes! This one-pan recipe for pork and vegetables is so flexible and delicious that we keep it in heavy rotation!
Ingredients
While I’m using peppers, onions, and sweet potatoes in this recipe, you can literally use any vegetable that you’d like! We’ve made this recipe with sweet potatoes, brussel sprouts, carrots, and so much more. No matter what combination you use, it’s such a satisfying meal!
- Pork – I use a Smithfield Roasted Garlic & Herb Fresh Pork Loin Filet in this Sheet Pan Pork and Peppers recipe, and it makes it SO easy. They are pre-marinated, and the only ingredients besides pork, are ingredients I can actually read and pronounce! However, you can use any cut of pork you’d like here, just add a bit of extra seasoning if you aren’t getting the marinated kind.
- Vegetables – Like I said, I made this Sheet Pan Pork and Peppers with a red, a yellow, and an orange bell pepper, a red onion, and a sweet potato, because it was what I had on hand. But you can add whatever you like or have on hand. You can add corn, russet potatoes, yellow onion, broccoli, asparagus, cauliflower, zucchini… or anything!
- Butter – We prefer to use butter in our cooking when possible, however, you can also use any oil that you prefer here! This gives the dish a nice crispy texture in some places, as well as enhancing the flavor!

Instructions
This recipe is as easy as it sounds! The full printable recipe with all the measurements is available at the end of the post, but here is a quick breakdown overview!
- Prep – Preheat the oven to 400°F
- Chop – Cut the vegetables up into bite-size pieces and sprinkle them onto a greased sheet pan.
- Slice – Cut the meat into 1/2″ slices and spread them out on the pan.
- Season – Pour melted butter or oil of your choice across the top of the vegetables. Then add garlic salt, pepper, rosemary, and parsley.
- Coat – Toss the meat and vegetables well to coat in the butter and seasonings. If the meat is pre-marinated, toss the veggies first and add the meat after they are coated.
- Bake – Let it cook at 400°F for 30 minutes, stirring halfway through for an even baking for the vegetables.
- Serve – Add this to a bowl of rice or serve alone for a hearty meal!

Sheet Pan Pork and Veggies
Ingredients
- 1.5 lbs pork loin filet (or pork of choice)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 red onion
- 1 large sweet potato
- 1 tablespoon garlic salt
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1 teaspoon cracked pepper
- 5 teaspoons butter, melted (or oil of choice)
Instructions
- Preheat oven to 400°F.
- Slice the vegetables up into bite-sized pieces and spread them over a lightly greased sheet-pan.
- Melt the butter and pour over the top of the veggies. Sprinkle the garlic salt, rosemary, parsley and black pepper evenly and toss to coat.
- Cut the pork into half-inch slices and place them on the pan with the vegetables.
- Bake at 400°F for 30 minutes, stir halfway through.
- Remove from the oven and serve with rice or alone!
Notes
- If you want to use chicken, instead of pork, you can use boneless chicken thighs or breasts. Reduce cooking time to 25 minutes if you do this.
- Other veggies like squash, potatoes and more are fine, just cut them in similar thickness to the other vegetables in the dish.
