Fried Thanksgiving Leftover Bites

Ingredients

  • 1 lb cooked turkey cubed
  • 4 cups cooked stuffing chilled
  • 2 cups mashed potatoes
  • 1/2 cup flour
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 1/2 cups Panko bread crumbs
  • 3 eggs beaten until frothy
  • oil for frying optional

Instructions

  • Cube the turkey, and get the separate bowls ready for the coating process. In one bowl, mix the flour and spices until well combined. In another bowl, add the eggs and whisk until frothy. In the final bowl, add the breadcrumbs or crushed corn flakes.
  • Take a piece of turkey and coat it with stuffing first, and then mashed potatoes.
  • Give the ball a good squeeze to make sure everything is firmly coated.
  • Place one ball at a time into the flour and spice mixture to coat it well.
  • Bring the ball over to the egg bowl and turn the ball until fully coated.
  • For the final layer, turn the egg-coated ball around in the breadcrumbs or corn flakes until fully coated.
  • Make sure your fryer (oil or air) is PRE-HEATED to 350 degrees. Leave plenty of space between each Deep Fried Thanksgiving bite, so they don't stick together. Fry them for 2 minutes, or until golden brown. Set them on a cooling rack with paper towels for 3-5 minutes to cool before consuming. NOTE: If using an air fryer, brush the outside of the ball with melted coconut oil or the cooking spray of your choice before frying.

Notes

We dip ours in leftover turkey gravy or cranberry sauce and it’s SO good. This is one of our favorite meals! Skip the turkey sandwiches this year and enjoy these Fried Thanksgiving Leftover Bites instead!
