Cheesy Ham and Potato Soup
I really love using my crockpot to make dinner. Sometimes, though, I find recipes and they have 700 steps of prep before you actually start cooking. My mornings are busy enough without adding a bunch of dinner prep on top – but fortunately, frozen potatoes make this recipe SO easy!
I use a bag of diced potatoes with onions and it literally makes this recipe dump and cook in the morning for an awesome dinner! Check out my Ham & Potato Egg Taco, which also uses frozen potatoes!

Ingredients
While the ingredients for this recipe may seem simple, they come together to make a hearty and filling meal that is wonderful for fall or winter dinners. Serve with a side of crusty bread for a meal your family will ask for over and over again!
- Diced Potatoes and Onions – While you can use fresh potatoes and onions for this recipe, you can also just use frozen if you want.
- Cubed Ham – You can purchase pre-cooked and cubed ham, or you can use leftover ham from the holiday hams that tend to be half eaten at the end of the day. Just cube the extra and freeze it to make this soup later on!
- Broth – Water can also be used, but chicken or vegetable broth gives this recipe a wonderful depth of flavor too.
- Salt and Pepper – Simple spices for a simple but amazing recipe! You can add whatever additional spices you’d like, but I’ve found that with the onions and the ham, this recipe is very flavorful without adding too much more.
- Heavy Cream – For the best creamy soup, don’t skip this ingredient!
- Cheese – The fastest cheese is a block of easy-melt cheese, but you can also use whatever cheddar you prefer. Just melt it a little bit before adding it to the soup!

Crockpot Cooking Instructions
This recipe is seriously so easy! Once you make it the first time you’ll be in love, I promise!
- Combine Ham and Potatoes – Add two bags of diced potatoes with onions into your crockpot. Then add the cubed, pre-cooked ham to the potatoes.
- Add Liquid – Add in the water or broth on top of the ham and potato mixture. I add 5 cups if I want it to be more “soupy” and only add 4 cups if I want it to be thicker like a chowder. Then add in the salt and pepper.
- Cook – Let it cook on high for 2 1/2 hours. After 2 1/2 hours, turn the heat to low.
- Add Cheese – Then cut up the easy-melt cheese and add it to the heavy cream in a large microwavable bowl. Microwave it for 1-2 minutes, stirring after each minute, until the cheese starts to melt some. Add it into the crockpot, and stir continuously until all the cheese is melted and mixed into the soup.
- Season and Serve – Add additional salt and pepper to taste, and serve your Cheesy Crockpot Ham and Potato Soup!

Stovetop Cooking Instructions
The process of making this soup on the stove is almost identical to the crockpot instructions! The only difference is that instead of cooking it in a crockpot for 2 1/2 hours, you’ll cook it on the stove over medium heat until the potatoes are soft. From there, continue on with the recipe as written.
