Ingredients

  • 2.5 lbs diced potatoes with onions fresh or frozen
  • 12 oz pre-cooked ham
  • 4-5 cups water or broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2/3 cup heavy cream
  • 16 oz cheddar cheese cubed into 1" cubes

Instructions

Crockpot Cooking Instructions

  • Add two bags of diced potatoes with onions into your crockpot. Then add the cubed, pre-cooked ham to the potatoes.
  • Add in the water or broth on top of the ham and potato mixture. I add 5 cups if I want it to be more “soupy” and only add 4 cups if I want it to be thicker like a chowder. Then add in the salt and pepper.
  • Let it cook on high for 2 1/2 hours. After 2 1/2 hours, turn the heat to low.
  • Then cut up the easy-melt cheese and add it to the heavy cream in a large microwavable bowl. Microwave it for 1-2 minutes, stirring after each minute, until the cheese starts to melt some. Add it into the crockpot, and stir continuously until all the cheese is melted and mixed into the soup.
  • Season and Serve – Add additional salt and pepper to taste, and serve your Cheesy Crockpot Ham and Potato Soup!

Stovetop Cooking Instructions

  • The process of making this soup on the stove is almost identical to the crockpot instructions! The only difference is that instead of cooking it in a crockpot for 2 1/2 hours, you’ll cook it on the stove over medium heat until the potatoes are soft. From there, continue on with the recipe as written.
