Cheddar works really well here, but you could also use mozzarella, Monterey Jack, or a mix of cheeses depending on the flavor you want. If you want to make these a little closer to some of the Starbucks-inspired combinations, chopped red pepper is a really good add-in too.

How to Make Spinach and Cheese Egg Bites
Start by preheating your oven to 375°F. Grease a 12-cup muffin tin really well, or line it with silicone muffin liners if you have them.
In a large bowl, crack in the eggs and add the milk. Whisk everything together until the yolks are fully broken up and the mixture looks smooth and well combined.

Add the chopped spinach, shredded cheese, garlic powder, salt, and black pepper.

Stir until everything is evenly mixed through the egg mixture.

Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full. They will puff up as they bake, so you don’t want to fill them all the way to the top.

Let the egg bites cool in the pan for a few minutes before removing them. They will settle a little as they cool, which is completely normal.
