Ingredients

  • 4 cups fresh blackberries
  • 1 cup sugar
  • 1/2 cup flour
  • pinch of salt

For the Crust:

  • 1 cup flour
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter
  • 3 tablespoons cold water
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 400.
  • Combine the flour and salt together in a large mixing bowl. Add in the butter, and cut the mixture with a fork, until it begins to form gravel sized pieces. Add in the water a Tablespoon at a time, and mixing after each one, until the dough forms a soft, non-sticky consistency.
  • Roll dough out on a floured surface to 1/4" thick. Sprinkle the dough with the sugar and cinnamon.
  • In the same bowl your dough was in, combine your berries, flour, sugar, and salt. Mix them until the berries are coated. There will be some extra dry ingredients, but that's okay. Pour the berry mixture into a greased 9x9 baking pan.
  • Cut the pie dough into 1"-2" squares and place them at random on top of the berries. Be sure to leave room for the steam to scape, or your dough will stay gooey.
  • Bake at 400 for 35 minutes.
  • Allow to cool for ten minutes before eating. Served best with vanilla ice cream.

Ingredients and Substitutions

Here’s a quick look at the ingredients. Some have substitutions, others don’t, but I like to make sure you have all the information to make this the best blackberry cobbler ever!
  • Blackberries – We like to use fresh blackberries, but frozen will work just as well! If you use frozen, thaw them first and drain the extra juice to keep the pie from being too soggy.
  • Sugar – White sugar is really delicious in this recipe, but you can also use honey or maple syrup instead. Just use 3/4 cup instead of the full cup. Zero calorie sweeteners can also be used, as long as they are 1:1 substitutions.
  • Flour – Use all-purpose flour for the best results, but if you need to use a gluten-free flour, just make sure it’s a 1:1 blend!
  • Salt – Don’t skip this, it’s a flavor conductor!
For the Crust:
  • Flour – Just like in the filling, we prefer an all-purpose flour. But you could use a 1:1 gluten-free blend if needed!
  • Salt – More flavor!
  • Butter – Use unsalted or salted butter here, the difference is very minimal. If you are watching your sodium, then sure, use unsalted.
  • Sugar – Granulated white sugar is our go-to in this recipe, but you can easily use honey, maple syrup, brown sugar, or even 1:1 zero-calorie sugar! The purpose of the sugar in the crust is to coat it with a sweet taste, so get there however it makes the most sense for you!
  • Cinnamon – Mixed with the sugar of your choice, this gives the dish a lovely depth of flavor that is traditional in all cobblers.
