These Shamrock Sprinkle Cookies are super cute and so simple to make! They’re the perfect size to send in school lunches and for little hands. They’re a super soft and delicious sugar cookie, and sprinkles make everything better!

St. Patrick’s Day is such a fun holiday for food. I’m not really a fan of making things like green eggs, or using green ketchup (remember that from the 90’s?!), and my kids aren’t really fans either.
HOWEVER, green cookies aren’t a deal-breaker! Especially since these Shamrock Sprinkle Cookies are covered in sprinkles, my kids are all about that!
This recipe was actually born out of a way to use up the extra shamrock cookie cutouts I had leftover from these Stained Glass Shamrock Cookies and they turned out so cute!

How do you make these Shamrock Sprinkle Cookies?

This sugar cookie dough is awesome because it’s easy to make, holds its shape perfectly and needs NO chilling at all! So it couldn’t be easier to make your shamrock sugar cookies for St. Patrick’s Day
It only cooks for about 8-9 minutes and they’re soft and delicious. To get the sugar cookies to stay put where they’re supposed to be, make sure to gently press the sprinkles on top of the cookies before putting them in the oven. This will make sure they stay put while baking!

Shamrock Cookies Recipe

Shamrock Sprinkle Cookies
Ingredients
- 1 cup butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
- 2 teaspoons baking powder
- 3 cups flour
- Concentrated green gel food coloring
- St. Patrick’s Day Sprinkles
Instructions
- Pre-heat your oven to 350.
- In a mixing bowl, cream the butter and sugar together.
- Add in the egg, vanilla, and almond and mix well. Mix in the green food coloring. Use gel, not liquid, and add about 1/2 teaspoon to get a nice green.
- In a separate bowl, mix together the flour and baking powder.
- Add in half the flour mixture to the wet mixture and mix.
- Add in the second half of the flour mixture, and mix. The mixture will be dry, but keep mixing and kneading until it’s a soft, pliable consistency (like play dough).
- Sprinkle flour on a flat surface, and on top of your ball of dough, and roll it until it’s about 1/4″ – 1/3″ thick.
- Cut your cookies out using a shamrock cookie cutter and place them about 1/2″ away from each other on the baking sheet. I used small 2″ cookie cutter.
- Sprinkle the St. Patrick’s Day sprinkles on top of the cookies, and gently press the sprinkles into the tops of the cookies, being careful not smash the cookies themselves.
- Bake at 350 for 8-9 minutes.
- Remove from the oven and let them cook for 5 minutes before transferring to a cooling rack.
- Should make about 32 cookies.
Nutrition
If you want to decorate them even further you could add green icing, but we chose to just cover the entire cookie in sprinkles and that works great! It’s an easy recipe that kids will enjoy helping to bake and decorating shamrock cookies together.
